Best Ever Chocolate Chip Cookies

Life is all about balance and that means chocolate chip cookies post workout are most definitely acceptable!

I am trying to decide if I want to start training for another half marathon but for now I’m trying to decide if I should have 2 or 3 cookies! Haha, life is so funny!

These chocolate chip cookies are HUGE and CHEWY

There is NO chilling required!

You CAN melt the butter, but they turn out more fluffy when you have it softened at room temp!

These cookies are soft, thick, filled with chocolate chips and a dense buttery dough baked into a heavy, milk-loving cookie!

Side note–the dough is heaven!!! I probably eat a cookie’s worth of just the dough…don’t even get me started with Trevor’s dough addiction! I have to kick him out of the kitchen when I bake these or he will eat the entire bowl!

I am going to go cozy up on the couch with a big glass of milk and a few cookies and watch my new favorite TV series on Netflix, Girl Boss!

All you girls out there, go be bo$$y and whip up some of these fab cookies!

Best Ever Chocolate Chip Cookies!

Ingredients

3/4 cup granulated sugar
3/4 cup packed brown sugar
1 cup butter or margarine, softened
1 teaspoon vanilla
1 egg
2 1/4 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 package (12 ounces) semisweet chocolate chips (2 cups)

Steps

Heat oven to 375ºF.

Mix sugars, butter, vanilla and egg in large bowl. Stir in flour, baking soda and salt (dough will be stiff). Stir in chocolate chips

Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.

Bake 8 to 10 minutes or until light brown (centers will be soft). Cool slightly; remove from cookie sheet. Cool on wire rack.

Strawberry Banana Waffles

Some days you just gotta whip up a batch of fresh waffles.

During the work-week I try to stick to either oatmeal, greek yogurt, or a fruit smoothie, but on the weekends I like to reward myself and get a little more creative in the kitchen.

These waffles are kind of a cheat though (I totally used Krusteaz buttermilk pancake mix) whoops! But still, these are to die for!

There is something so satisfying about a light, fluffy, slightly crunchy-edged waffle. Especially when the butter and syrup nestle themselves into each little pocket! Am I right?

Adding fruit as a topping is always nice because it makes the ALL BREAD breakfast feel a bit lighter. Maybe I just tell myself that so I don’t feel so guilty for plowing down multiple waffles, cause I mean I had fruit too right??

A secret to making them extra tasty is to use an overly-ripe banana to blend in the batter

I used 1 full banana and made 4 large waffles following the recipe on the Krusteaz box!

I also like to add in some cinnamon and vanilla extract (again, totally optional, but I think it makes the flavor out of this world!

Top it off with maple syrup, some fresh berries, and banana coins, and a sprinkle of powdered sugar!

Enjoy with coffee, tea, milk, or whatever you’d like!

These waffles are perfect if you are feeling like you haven’t been getting enough simple carbohydrates in your diet. I know when I work out a ton I can start to drag or feel depleted in energy if I don’t replenish. Yes, protein is KEY, but it is also crucial that you listen to your body and reward it for all the exertion and activities it allows you to do!

I was craving some waffles this morning, and these truly hit the spot. Remember, carbs aren’t bad for you!

Energy, boost your mood, keep your memory sharp, and are great pre-exercise!

I added a ripe banana into the batter, some cinnamon, and vanilla extract!

Feel free to do the same, or use whatever else sounds good to you!

People often make things more difficult than they truly are. This is true in multiple aspects of life. However, making the decision to eat better and treat your body right isn’t always an easy thing to do.  As some would say, easier said than done…as they reach for the chips on the table at work while they have an apple and carrot sticks in their purse or backpack.

So we need to ask ourselves, are we making the decision to eat healthy more difficult than it truly is??

Maybe WE as individuals are motivated to make a healthy change for our life, but the temptations around us and our peers make it more difficult to live a healthy lifestyle?

I don’t know the answer to this question, but what I do know is that the decision to eat well can only be made by one person.

It is a choice that you make in your mind and in your heart, and hopefully you have people around you who support you and challenge you to be the best version of you possible.

I know that choosing the sugar snap peas and handful of almonds isn’t always the most fun. Especially when the hot cheetos, ice cream and pop-tarts are taunting you in every aisle of the grocery store, BUT what makes you feel better afterwards?

Be real with yourself

The cheetos taste damn good going down, but afterward???? Let’s be real, ya feel like complete s***!!!!

Whereas, the healthy veggies and nuts make you wanna get up and go kick some serious booty!

Okay, so here is a perfect scenario. You’ve been binging on McDonald’s, frozen yogurt, fried chicken, chinese food, and soda all week. So ya, ya feel like death, and you’ve probably gained a bit of weight (not muscle i might add). Suddenly a thought comes to mind

“Damn I really need to get my eating back under control.”

who’s had that very thought run through their mind?? are you nodding right now? yup, thought so. cause guess what, so am I…

Listen, I know that it can be tough, but at the very least I wanted to share 7 simple ways that you can start eating healthier TODAY!

  1. Don’t count calories! Count ingredients! The fewer the better (and whole foods, NOT processed)

  2. Include some protein, carbs, and fat at every meal

  3. Focus on healthy fats (avocados, nuts, olive oil etc)

  4. Keep sugar to a minimum – bye bye soda!

  5. Choose whole grains

  6. If you can’t grow it, don’t eat too much of it

  7. Drink your coffee/tea black! No cream/sugar

I truly believe that these 7 simple steps will lead you closer to your health goals.

Let’s be real though, there’s nothing slutty about these cellulite filled angels!

I’ve been BINGE watching that new series on Netflix called “Girl Boss”…who’s heard of it…well yea, pretty much I’m mega inspired and these brownies were the brain child of all my inspiration from the show.

Real talk though, that show makes you want to get up, put on some damn lipstick and make shit happen!

6 Reasons You Should Workout In The Morning

One of my most dreaded and most favorite thing to do is workout in the morning. The alarm goes off at 5:15am and you think to yourself “F***! what am I doing with my life???!” Come on, you know I’m right…but I swear to you-do NOT snooze that alarm because your body will thank you SO much more for getting up early and crushing that early AM workout.

Here are a couple of reasons why working out early in the morning is great for you:

Banana Berry Smoothie

This Banana Berry Smoothie is great if you are working out a ton and need the potassium (from the banana) to prevent those muscle cramps!

I did a huge workout yesterday so naturally this smoothie was VERY necessary this AM.

I told my boyfriend I was posting another smoothie recipe, and he was like “uhhh another smoothie recipe?!?”

Well…DUH

It’s spring baby!

Plus, there are really 1,325,000,000 variations on smoothies (am I right?!)

They are SO FUN and EASY

Banana Berry Smoothie

Ingredients:

  • 1/4 cup frozen berry medley (raspberries, blackberries, blueberries)
  • 1/2 frozen banana
  • 1/2 scoop VEGA Vanilla protein powder
  • Water or Almond Milk to blend

Directions:

  1. Blend and Enjoy!!
  2. Top with granola if you’re feeling extra inspired!

Healthy Vegan Veggie (and bean) Salad

Been craving a tex-mex all veggie salad this week and I finally got around to making it! This beauty is beyond simple to make and is the epitome of freshness. I didn’t follow any particular recipe for this because many that I looked at were slightly funky and included ingredients that I don’t necessarily love (for example: one called for a can of green chiles??) not really my jam, so I stuck with the basics. Shout out to my mom also because she used to make this dish a TON during the summer 🙂 It’s definitely a family favorite.

I like to grill up a chicken breast to serve alongside the salad, but if you are vegetarian or vegan, or just simply don’t want meat, this salad is quite filling due to the amount of veggies and beans it contains! Plus, isn’t it just beautiful? Eat your colors people.

Healthy Veggie Salad

Ingredients:

  • 1 15oz can black beans (rinsed/drained)
  • 1 15oz can garbanzo beans (rinsed/drained)
  • 1 15oz can corn (rinsed/drained)
  • 1 Green Bell Pepper (diced into small pieces)
  • 1 pkg of Cherry Tomatoes
  • 1/4 cup Cilantro
  • 1 Red Onion (chopped into small pieces)
  • Juice of 2 Limes
  • 1/4 cup Extra Virgin Olive Oil
  • Salt and Pepper (add as you’d like)
  • Avocado slices

Directions:

  1. Mix all ingredients (EXCEPT avocado) into a large bowl.
    1. I like to make the salad a few hours before I am ready to eat it. That way it allows the flavors to blend together and the lime to soak into the veggies even more!)
  2. Garnish with avocado when ready to eat!
  3. Enjoy!
